ISSHO TABERU Damascus Mini Gyuto Chef's Knife 160mm Matt
The ISSHO TABERU Damascus Mini Gyuto is a compact Japanese chef's knife with a 160 mm blade made of 69 layers of Damascus steel, weighing only 93 g. It suits precise work on vegetables, delicate meat and fish, where a large knife would be too much.
At a glance
- 160 mm blade, 69 layers of Damascus steel
- Hardness 61 HRC, 50/50 edge
- Weighs only 93 g
- Two-tone wenge wood handle
- Made in Japan, in a kiri wood box
Small, but a true gyuto
The gyuto shape is the Japanese counterpart of the Western chef's knife. In the mini version the blade is slimmer and shorter, so you work with a lot of control. The blade tapers from 1.6 to 0.5 mm and glides easily through food.
Matt Damascus blade
The multi-layer Damascus blade has a matt polish and shows a fine pattern. The wenge handle is two-tone and sits steadily in the hand.
