The Tim Mälzer kitchen knife set from Kai Shun Premier contains a santoku with an 18 cm blade and a utility knife with a 16.5 cm blade. Together they cover most kitchen tasks, from vegetables to fish and meat.

At a glance

  • Santoku 18 cm and utility knife 16.5 cm
  • 32 layers of Damascus steel around a VG-MAX core
  • Hardness 61 ± 1 HRC
  • Hammered finish (Tsuchime)
  • Handmade in Japan

Hammered blade

The blades have a hand-hammered surface, known in Japan as Tsuchime. The small dimples help food come away from the blade more easily. The hard steel core sits under 32 layers of Damascus and makes the edge hard yet flexible.

Two knives for every day

Use the santoku for vegetables, fish and meat, while the smaller utility knife handles finer work. The symmetrical Pakkawood handles suit both right and left handers. Tim Mälzer's bull's head is engraved on the end of the handle.
