This high-quality Gyuto knife model combines traditional Japanese design with modern functionality. 

The newly revised steel core, the matte polished surface, and the elegant wenge wooden handle make the 69-layer Gyuto our new flagship.

With 61 HRC, the knife is slightly more flexible, offering high versatility in cutting tasks.
The traditional Japanese design, the high-quality 69 Damascus steel layers, and the ergonomics with the European wooden handle make this knife so popular in Japan.

With a blade length of 200mm and an ultra-light weight of 161g, the knife fits securely and comfortably in the hand. The thin blade glides easily even through large and hard items like pumpkin.

Use:

  • Use the Damascus knife for vegetables, meat, fish, and bread, never for bones or other extra-hard foodstuffs.
  • The Damascus steel blade is rust-resistant, but it is important to clean the entire knife with water after use and then dry it thoroughly.
  • You can then rub the blade with care oil to maintain it and enjoy it for a long time.
  • The knife has a very sharp edge. Please use a cutting board made of natural wood such as bamboo, cherry, or oak.

Care instructions:

  • Over time, the sharpness of such a knife can decrease with frequent use. We recommend restoring the blade using a suitable sharpening stone.

Our knives are harder than normal knives:

  • Never use Japanese knives for chopping or scraping. Due to their extreme hardness, the knives can break.
  • For cutting frozen food, it is essential to use a special kitchen knife for frozen food, and not our knives.

Caution is advised:

  • The knives have a very sharp blade. There is a risk of injury if the blade is touched with fingers.
  • Do not hold in fire (heat). The hardness of the knife blade will be affected and rendered unusable.
  • Do not wash in the dishwasher. The knife can be damaged.
  • Please keep the knife out of reach of children.
  • The handle is made of natural wood. Avoid prolonged soaking in water to prevent the handle from softening.
  • Before using the knife, check the handle for firmness. If anything is loose, please do not use it.
